4 dozen oysters (chopped) and their liquid
1 onion finely chopped
1/2 bunch green onions finely chopped
1 clove garlic finely chopped
1/2 cup celery finely chopped
1/2 bunch parsley chopped
1 stick butter
1/2 cup flour
Salt and Pepper
Dash Red Pepper
36 small patty shells or 12 large patty shells
Cook oysters in their liquid by bringing to boil, then simmer ten minutes. In separate pan, saute onions, green onions, celery and garlic in butter until soft. Blend in flour until smooth. Add remaining ingredients and oysters. Cook five minutes; pour into patty shells and bake in 370 degree oven for five to eight minutes.
Makes 36 small patties or 12 large patties.
