1 POUND DRIED RED BEANS (Kidney Beans) Soaked Overnight
1 CUP CHOPPED ONIONS
1/4 CUP CHOPPED BELL PEPPER
SALT & PEPPER TO TASTE
4 CLOVES GARLIC, MASHED & CHOPPED FINE
1 TABLESPOON PARSLEY
1 POUND SMOKED HAM, DICED
1/2 POUND SMOKED SAUSAGE, SLICED
1 CUP VEGETABLE OIL
Put beans, onions and bell pepper in a pot with enough water to cover well and bring to a boil. Reduce to medium heat. In a frying pan, add oil and saute the suasage and ham. Add the meat, garlic, parsley, salt and pepper to the pot and continue to cook on medium heat until beans are tender and begin to burst. Add water from time to time, to make a thick rich gravy.
Two large cans of red beans may be substituted for dried red beans.
